Healthy recipes with lentils don’t have to take hours to prepare. Use red lentils, which cook up in just 45 minutes, to make this richly spiced soup on a weeknight. Lentils are low in calories and high on nutrition.

Ingredients:

  • 1 tablespoon coconut oil
  • 1 onion, chopped finely
  • 3 cloves garlic, chopped
  • 2 tablespoons fresh ginger, minced
  • 1 jalapeno pepper, seeds and ribs removed and chopped finely
  • 1 tablespoon curry powder, preferably Madras
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 ½ cups red lentils
  • 8 cups low-sodium vegetable broth
  • 3 tablespoons cilantro, chopped
  • 2 tablespoons lemon juice

Instructions:

Heat the coconut oil in a heavy stockpot over medium heat. Add the onion and cook until softened, then add the garlic, ginger, jalapeno, curry, cinnamon and cumin. Stir, as the spices cook, for about 5 minutes. Add the lentils and vegetable broth and bring to a boil. Lower the heat and simmer, covered, for about 45 minutes. Stir in the cilantro and lemon juice. Season to taste with salt and pepper.
