Your typical lemon poppy seed muffin is a sugar bomb that offers no nutritional value. Boost the value of your treat by subbing in oats, egg whites, applesauce and Greek yogurt. Easy recipes for protein desserts typically contain a little protein powder, too – you can choose whey, soy or another plant-based variety.
Preheat the oven to 350 degrees Fahrenheit. Pulse the oats in a food processor or high-speed blender to create a flour-like powder. Place the oat flour in a large bowl and stir in the protein powder, poppy seeds, baking soda and cane sugar. In a separate bowl, beat the egg whites with the applesauce, yogurt, lemon juice, zest and vanilla. Add the wet ingredients to the large bowl with the dry ingredients and stir until just combined. Turn into a 9 x 9 pan sprayed with cooking spray. Bake for 35 to 40 minutes, or until golden brown. Allow to cool and cut into squares. Makes 16 servings.
