Coconut Quinoa Pudding


Top off your healthy meals with this satisfying, homey dessert. Instead of corn syrup-sweetened pudding, make a homemade one that uses healthy coconut oil, dried fruit and protein-rich quinoa. You’ll satisfy a sweet tooth without overdoing added sugars.



  • 1 cup cooked quinoa
  • 2 ½ cups coconut or almond milk (not the canned coconut milk, but the type in the carton)
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 tablespoons coconut oil, melted
  • 1/2 cup raisins
  • ½ cup dried apricots, chopped
  • 3 tbsp. coconut oil
  • ½ cup fruit juice-sweetened dried cranberries
  • ½ cup shredded unsweetened coconut
  • ½ cup slivered almonds, toasted


Preheat the oven to 400 degrees Fahrenheit. In a large baking dish, mix the quinoa and the other ingredients thoroughly. Place in the oven for 45 minutes.
