Shrimp with Green Cocktail Sauce

Instead of purchasing the ketchup and horseradish cocktail sauce to go with your boiled shrimp, make a green dip full of healthy food such as herbs and almonds. Guests will enjoy the twist on a classic shrimp cocktail.

Ingredients:

  • 2 pounds cooked, peeled medium to jumbo shrimp
  • ½ cup fresh flat leaf parsley leaves
  • 1 cup fresh basil leaves
  • 1 ½ tablespoons blanched almonds
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 garlic clove
  • salt and pepper to taste

Place the herbs, garlic, olive oil, vinegar, almonds and seasoning into a blender and purée. Add water until you reach a dipping consistency. Serve alongside the boiled shrimp
