  • 2 tomatoes, chopped
  • 1 cup sun-dried tomatoes
  • Juice of one lemon
  • 1 pitted date
  • 1 chipotle pepper, canned in adobo (if you can find it; if not, just a regular chipotle pepper will do)
  • Salt and pepper to taste

Combine all the ingredients in a high speed blender or food processor. Blend until smooth and well-combined.
